The redbud trees are starting to bloom already, which is a sign of the beginning of spring around here in east Texas. Redbud flowers are small, pink flowers that grow all over the stems and branches of the redbud tree where growth nodes are present.

The small flowers can be used to make teas and jelly but I’ve heard they have a very light taste to them (I haven’t had a chance to try them myself). They’re also said to be high in vitamin C and/or minerals.

I don’t know if I’ll have the time to harvest any this year, which is okay, there are plenty of other things to keep an eye out for that we could forage here. I hope we get to enjoy foraging with the kids this year.
